Saber (Artoria) is much stronger than Mordred. So it is most likely Saber (Artoria), at least in my opinion.

However, if we were talking about a fight where Shirou was Saber (Artoria)'s Master, the situation may be different, although I think that Saber (Artoria) can still win even in that situation.
